I have Links 2003 installed on what I've always thought of as its standard pathway: Program Files(x86) > Links 2003.
It recently dawned on me that one of the things I wouldn't want to lose to a catastrophic event would be my Player and Course Stats (see attached). Could someone please advise where (presently I am guessing) in the main Links 2003 folder, this info is stored. Thanks.

You have to print your stats to file. They end up here......

For me, they are at
C:\ProgramData\Links 2003\Course Data (STA files)
and
C:\ProgramData\Links 2003\Players (PIN files)
ProgramData is a hidden folder, turn on showing hidden folders in File Explorer's settings if you cant see it.
Otherwise try Armand's file location spreadsheet in the sticky thread for file locations in Tech Corner.
